Croaker is a great tasting fish – a few recipes

Grilled Oriental Croaker

4 medium croaker ¼ cup soy sauce 2 tablespoons brown sugar 1 clove garlic, minced 1 tablespoon fresh ginger, minced 2 tablespoons orange peel, finely julienned 2 tablespoons orange juice 1 tsp rosemary 1tsp thyme ¼ teaspoon red pepper flakes, crushed 2 tablespoons butter, melted 4 scallions, sliced

Place fish in a bowl. Combine remaining ingredients and pour over fish. Marinate one hour. Place fish on a grill, about 5 inches from heat for about 10 minutes per inch thickness of fish, turning once half-way through cooking time and basting often with the marinade. When fish is tender and flakes easily, remove from grill and serve hot. Fish can also be cooked indoors by placing it on a broiler pan and broiling about 5 inches from the heat for 10 minutes per inch of thickness, turning once half-way through the process. Serves 4.

Summer on the Chesapeake Bay: Bow-fishing on the Potomac and Patuxent Rivers

Bow-fishing on the Potomac, So, I cast the baited but non-weighted rig behind the boat, flipped out a lot of slack line, and put the rod in the stern rod holder with an open bail while I baited up a bottom rig on another rod. By the time I got that rig to the bottom, the drift rig rod was jumping. I pulled in two big croakers on that rig and proceeded to catch my limit of croaker on the drift rig. I think the wire spreader has enough weight to drift to the bottom and move across with the current. Regardless of why it works, this is a good trick that you are welcome to forget but a smart fisherman won’t.

Regardless of whether you are catching one or two fish at a time, June is the time to catch a nice mess of fish with minimum effort. If you can’t catch them now, you might as well take up playing golf.

Cap’n Larry Jarboe: Croakers by the Pound

Croaker fishing from a pier is quite productive. But, you can increase your odds by taking a boat to the edge of a channel and fishing along that edge. Also, oyster beds are particularly good feeding grounds for croakers to dine upon. Drift fishing will help you cover a lot of bottom till you find a good area to anchor.

The croaker limit of 25 per angler is quite generous. Make sure you keep those noisy fish chilled or iced down well. No sense spoiling that delectable salt water taste that croakers are known for. Fresh fried croaker is fine eating. Freezing the fillets diminishes the flavor greatly.

Letter: Now we know why Cindy Jones would assist the campaign of a liberal judge — she sold her endorsement

What we didn’t know then was why Cindy Jones would help a liberal Judge appointed by a liberal Governor, when she claims to be a conservative. Now we can piece together the full nature of the corruption. Cindy Jones sold her endorsement to Judge Densford and her vote to land developers (you may recall that last month she changed her vote on the issue of public sewer in Charlotte Hall and Mechanicsville). The real question that we must ask is if she sold her endorsement in support of our liberal Governor’s political appointee and she sold her vote as county commissioner to land developers then what will she do if she does win the State Senate seat?

Charlie Hall: Thank God for this Country Boy – The ‘Whip’ of the Dorsey Machine

What many of them had in common was adherence to a political tradition in the Seventh District, often called “Dorsey-land” due to the tribe in local politics named for the late Judge Phillip H. Dorsey, and later led by his son, long-time St. Mary’s County States Attorney Walter B. Dorsey. Judge Dorsey had his allies and they were the Baileys, Bo, Eddie, Bernard and many more. Others who were influential in the Dorsey Machine, as the liberals who had their own machine liked to call it, were “lieutenants” of the political organization – one of whom was Charlie Hall.

To simply report that Charlie Hall just kicked the bucket is to do the man a great injustice, without describing the important role he played in the politics and life of one county of three-thousand in America.

Charlie rose from being a lieutenant to being a standard-bearer in that in 1974 he mounted a credible campaign for County Commissioner and lost the Democratic Primary to John Knight Parlett, the scion of a gas empire on the east coast.
